Homemade French Onion Soup Recipe

This soup is great to be served with sandwich :)

Ingredients

Well, for ingredients, you shall prepare for 1/4 cup of butter, 3 onions (peeled and thinly sliced), 1 tsp of white sugar, 1 tablespoon of all-purpose flour, 2 1/2 cups of beef broth, 2 cups of chicken broth, 1/4 cup of red wine, 1 bay leaf, 1 french baguette, 4 oz of gruyere cheese (shredded), 4 oz of mozzarella cheese (shredded), salt and pepper to taste

The Making

Heat a saucepan, melt butter or margarine. Sprinkle some sugar. Saute onion for about 10 minutes until soft over medium heat.

Stir in flour until well mixed with the onions. Slowly pour in water, wine and beef broth. Bring to boil. Reduced heat and simmer for about 10 minutes.

Meanwhile, cut 4 one inch thick slices of bread from the loaf. Toast the bread slices at 325 degrees F (165 degrees C) just until browned, about 10 minutes. Reserve the remaining bread to serve with the soup.

Ladle soup into four 12 ounce, oven-safe bowls. Place 1 slice toasted bread on top of the soup in each bowl. Fold Swiss cheese slices, and fit onto toasted bread slices. Place soup bowls on a cookie sheet for easier handling.

Bake at 425 degrees F (220 degrees C) for about 10 minutes. Serve immediately.


Homemade Pea Soup Recipes

I have made this soup twice this week because it is so good and quick to make. It spent me about 15 minutes only, simple yet delicious. This soup is great to be served in hot either cold.

Ingredients

(4 servings)

Well, for ingredients, you shall prepare for 1 large shallot, minced(3 tablespoons), 1.5 tablespoons of unsalted butter, 2 cups low sodium chicken broth or vegetable broth (for vegetarian option), 2 sprigs of mint, 1 lb frozen petite peas, 1/4 cup heavy cream, Salt and freshly ground pepper to taste, Crème fraîche for garnish (can substitute sour cream diluted with cream), fresh mint strips for garnishing.

The Making

(4 servings)

Prepare a medium saucepan, melt butter over medium heat. Saute shallots for few minutes until soft , but not browned.

Pour in broth and mint sprigs to the shallots, bring to boil over high heat. Add in frozen peas and adjust with salt and pepper to taste. Return to a boil, reduce heat, simmer until the peas are tender.

Discard the mint and transfer soup into a blender, Purée until smooth. Blend in cream. Taste and correct seasoning.

Reheat to serve warm, or chill to serve cold. Garnish with crème fraîche and mint strips before serve.


Homemade Fresh Tomato Soup Recipe

This soup is ridiculously easy to make. And...Tasty! :)

Ingredients

Well, for ingredients, you shall prepare for 4 Ripe tomatoes, Salt to taste, pepper, mint leaves and butter

The Making

Firstly, place the tomatoes in boiling water for about 2 minutes. Then, immediately transfer them into iced cold water. Peel the tomato skin and cut the tomato into small pieces.

Take water in a pan, boil it and add in cut tomatoes. Add in mint and season with salt. Bring to boil for about 5 minutes. Transfer soup into a blender and puree until smooth.

Sieve the blended mixture to discard the seeds. Garnish it with a dash of butter and serve hot. Enjoy :)
