Homemade Chicken Soup Recipe

This Homemade Chicken-Soup Recipe was given by my mother. She love to cook this soup for our lunch during weekend. I love this soup very much, simple and nice :)

Ingredients

Well, for ingredients, you shall prepare for 2 chicken legs with back, 1 large onion (peeled and chopped), 1/2 cup of fresh chives, 1 carrot (peeled and chopped), 1 clove garlic, 2 stalk of celery, 2 cubes of Oxo chicken flavoring, 1 package of egg noodles, soy sauce, salt and pepper to taste.

The Making

Boil the chicken in a saucepan until cooked. Remove the chicken from pan, reserve liquid. Let it cool for awhile. Cut the meat from bone into bite size pieces. Return the chicken pieces to the pan.

In another separate pan, add in bones, carrot, 1/4 of onions, celery and garlic, covered with water and bring to boil. Reduce heat and simmer for about half an hour until vegetables are tender. Transfer the vegetables including liquid to chicken pieces. Bring soup to boil.

Add in remaining onion and Oxo, simmer for another 20 minutes. Add in egg noodles and chives. Cook until noodles are cooked. Season with salt and pepper to taste. Sprinkle with soy sauce when serving. Serve hot.
