Green Bean Soup

Green Bean are commonly used in Chinese cuisine. This Sweet Green-Bean Soup are widely served as dessert in Chinese Restaurant or tea time for Chinese around the world. This soup is extremely SIMPLE making :)

Green bean, also called in "mung bean". Consumption of green beans helps the body in reducing the amount of free radicals and thus, prevents cholesterol from becoming oxidized and cause blocked arteries. Being rich in iron, green beans serve as a very good source of energy and are beneficial for menstruating as well as pregnant women.

Regular consumption of green beans has been associated with strengthening of the immune system.

Ingredients

(servings : 3)

For ingredients, you need to prepare for 300g Green Beans (washed and removed dirt and discolored beans), 1.5 litre of water, 6 Pandan leaves (wash, cut off the dead edge and tied in a bundle with pandan leave too)(optional item), 75g Sugar or to taste.

The Making

Prepare a soup pot, put in green beans & pandan leaves and pour in water. Cover and bring to boil. Reduce heat and simmer for 1 1/2 hours. Season with sugar. Serve hot.

This soup is delicious too if served in cold by adding ice cubes. You can follow the above cooking method to cook for Red Bean Soup by just replacing the Green beans by Red beans :)
