Gourmet-Soups make a wonderful meal, and once you make a pot or two, you will found that is really not that hard to make :) I wish to share with you some of the delightful gourmet-soup recipes here. I just Love these wonderful soup! Great! Great! Great!
Strawberry Gourmet-Soup Impressive and beautiful gourmet soups.

Ingredients To prepare 1/2 cup of fresh strawberry (chopped coarsely), 1/2 cup of strawberry ice cream, 1/4 cup of heavy cream (divided), 1 tsp of powdered sugar, 1/2 tsp of fresh lemon juice, chocolate syrup for garnishing the champagne glasses, 2 mint sprigs. The Making Puree strawberry, ice cream, heavy cream and lemon juice in a food processor until smooth. Refrigerate it. Put chocolate syrup in a small deep flat bowl; dip glass in chocolate until syrup runs down sides of champagne glass. Whip the remaining heavy cream with powdered sugar. Pour strawberry soup in champagne glass, garnish with whipped cream, a sprig of mint and serve. Wine recommendation: a light sparkling wine such as Moscato d'Asti. Wonderful!!
Wild Mushroom Gourmet Soup A rich, creamy & delicious mushroom gourmet soups with truffle oil.

Ingredients Well, you shall prepare for 1/2 oz dried Morel wild mushrooms, 1 cup of chicken broth, 1 tbsp of unsalted butter, 1 large shallot (sliced thinly), 1 garlic cloves (minced), 2 ounces of fresh shiitake wild mushrooms (sliced thinly), 1 tbsp of flour, 1 tsp of dried thyme, 2 tbsp of cream, 1/4 tsp of Madeira wine, salt and pepper to taste, white truffle oil. The Making Firstly, place in the wild mushroom in a large bowl. Boil broth in a pot and pour the boiling broth into the bowl with mushroom. Let it stand for about 25 minutes. Then strain reserving the liquid (discard any grit in the bottom of the bowl). Coarsely chop the mushroom. Heat a saucepan over medium heat, melt butter. Saute garlic, shallots, Morel and Shiitake mushroom until shallots become transparent. Add in onion and flour, mixing well and cook for about 2 minutes. Add in reserved broth-mushroom liquid and thyme. Cover the lid and bring to boil. Whisk until thickened slightly and smooth, simmer for about 10 minutes. Transfer soup into a blender, puree until smooth. Return to pan and add in cream, Madeira wine, salt and pepper. Stir constantly and heat through gently. Drizzle with truffle oil before serve. For an added presentation add 1/2 teaspoon cream atop the soup and make swirls with a toothpick.
Carrot Cashew Curry Coconut Gourmet Soups A fantastic balance between creamy coconut milk and spicy curry.

Ingredients Well, for ingredients, you shall prepare for 2 tablespoons of oil, 2 onion (peeled and diced), 2 celery stalk, 3 cloves of garlic (diced), 1/4 cup of chopped fresh ginger, 1 tablespoon of curry powder, 1 teaspoon of cinnamon, 1 teaspoon of tumeric, 1 teaspoon of coriander, 1/2 teaspoon of cumin, 1/2 cup of raw cashews, 1.5 pounds of carrots (peeled and grated), 6 cups of vegetable stock, 1 can of coconut milk, salt and pepper to taste. The Making Prepare a saucepan, heat oil over medium heat. Saute onion, celery, garlic and ginger for about 15 minutes. Add in cashews and spices and cook for another few minutes. Add in carrot and mix through. Pour in stock and bring to boil. Reduce heat and simmer until carrot become soft. Transfer into a blender and puree until smooth. Add in coconut milk and heat through. Season with salt and pepper. Serve hot.
Apple and Raisin Gourmet Soups A fantastic healthy chill soup. Ingredients (3 servings)Well, for ingredients, you shall prepare for 2 cups of apple juice or cider, 2 cooking apples (peeled and cubed), 1/4 cup of raisin, 2 inches of stick cinnamon, 1 tablespoon of brown sugar, 1 tablespoon of Brandy. The Making Prepare a saucepan, place in apple juice or cider , cooking apple, raisins and stick cinnamon. Cover the lid and bring to simmer for about 15 minutes until the apples are tender. Add in sugar and brandy. Cover and chill. Discard cinnamon before serving. Done :)
Trio of Wild Mushroom Gourmet Soups This soup comprising of variety of mushroom which give variety of flavor, aroma and textures! Awesome!

Ingredients To prepare 1 large shallot (peeled and sliced thinly), 8 oz of Porcini mushroom (sliced), 8 oz of Chanterelle Mushrooms (sliced), 8 oz of oyster mushroom (sliced), 8 quarts of chicken stock, 1 lb of Yukon potatoes (peeled and diced), 2 tbsp of fresh thyme (chopped), 2 tbsp of butter (unsalted), 1 tsp of fresh oregano (chopped), 1/2 cup of Madeira, 1/2 cup of heavy cream, salt and pepper to taste, chopped parsley for garnish. The Making Heat a saucepan, melt butter. Saute shallot for about 5 minutes. |Add in mushrooms and cook for another 6 minutes. Pour in stock, potatoes, oregano and thyme. Cover the lid and bring to boil. Reduce heat and simmer for about 15 minutes. Transfer soup into a blender or food processor, puree until smooth. Return to pot, stir in Madeira and season with pepper and salt. Stir in cream and parsley before serve. You can also reserve some sliced & cooked mushroom for garnishing :)
Broccoli Ham Gourmet Soups Ingredients Well, you shall prepare for 1/4 cup of onion (peeled and chopped), 3 tablespoons of butter, 1/4 cup of all-purpose flour, 1.5 teaspoon of instant chicken bouillon granules, 1/2 teaspoon of dry mustard, 1//2 teaspoon of dried thyme crushed, 1/8 teaspoon of pepper, 2 cups of milk, 2 cups of water, 2 cups of broccoli flowerets, 1.5 cups of fully cubed cooked ham. The Making Firstly, prepare a saucepan, heat butter, saute onion for about 3 minutes until soft. Stir in flour, chicken bouillon granules, mustard, pepper, thyme, water and milk. Cook until the soup thickened & bubbly over medium high heat. Add in fresh broccoli ad cooked ham. Bring to boil. Reduce heat and simmer for about 5 minutes until broccoli are tender. Stirring frequently. Serve hot. Yummy Yummy!
Cream of Broccoli Gourmet Soups Easy to prepare, nice to see and nice to eat :)

Ingredients (2 servings)Well, for ingredients, you shall prepare for 2 tbsp of butter, 1 onion (peeled and sliced thinly), 1 potatoes (peeled and sliced thinly), 2 cups of chopped broccoli, 1.5 cups of chicken broth, 1/4 tsp of salt, 1/2 cup of heavy whipping cream, ground black pepper to taste. The Making Heat a saucepan, melt butter. Add in call veggies, toss to coat with butter, after that press parchment paper on top of veggies (this is called "sweating", for better flavor). Cover the lid and simmer gently until veggies softened. Don't brown. Remove paper, add chicken stock and bring to boil over high heat. Reduce heat to medium and simmer until veggies are tender. Transfer soup to a blender and puree until smooth. Return to pan and stir in cream, salt and pepper to taste. Heat through gently. Serve hot.
