Easy Duck Soup

Ingredients for Duck-Soup To prepare Duck carcass, 1 can Stewed tomato (chopped), 3 stalk celery, 1 Onion, 1 cup of Lentil, Fresh rosemary, Garlic salt, Kosher salt, Oregano, Bay leaves, Black pepper and BasilThe Making Prepare a soup pot, put in the duck carcass and covered by 1 gallon of water and boil it for about 1 - 1 1/2 hours. Remove carcass by draining the broth over a colander and catching the bones and meat in it. Remove the bones from meat, and set meat aside. Put back the broth into the pot. Add cleaned and cut vegetables and spices to the duck broth. During vegetables are cooking on low-med, chop the pieces of duck, and return to soup. Simmer for about 1 hour. Serve. p/s : Do not overcook it as it'll be mushy.
Chinese Duck Soup

Ingredients : To prepare 1 pounds of Chinese barbecued duck, 12 pcs Chinese style mushroom, Boiling Water, 4 Scallions (chopped), 4 cups Chicken broth, 1 Red bell pepper (chopped), 1 teaspoon of Soy sauce /or Tamari , 1 teaspoon of oyster sauce , 3 tablespoon of Dried sherry and 1 Canned sliced bamboo shoots (5 oz) The Making : 1). Firstly, you need to put all the mushroom into a bowl and pour in the boiling water, leave it for about 20 minutes; drain and chop the mushroom. 2). Secondly, you need to cut away the duck meat from the bone and put aside; dispose the bone. 3). Put the broth into a pot and boil it, add in scallions, red bell peppers, soy sauce or tamari, oyster sauce, dried sherry, sliced bamboo shoots and mushrooms; coot all of them in low heat for about 10 minutes; Remove the cover lid when cooking. 4). Before serving, add in the duck meat. 5). Serve Our Suggestion to you : you can add in some "wanton" if you like :)
