Detox Soup - Light Spinach, Parsley, Lemon & Garlic Soup

Looking for Detox-Soup? You know when you've been eating more treats than normal, maybe full breakfast 3 times in a week instead of once and then on the other days you have a donut? Or, better yet, you do what I did and make three cheese macaroni with whipping cream? Yes, my friends, it's time for detox-soup.
Ingredients for Detox SoupFor ingredients, you need to prepare 1 chopped onion, 1 teaspoon of olive oil, 2 chopped cloves garlic, 1 handful of chopped fresh parsley, 225g (8oz) chopped fresh spinach, 400ml (14fl oz) vegetable stock or water, 1/2 cup of lemon juice, salt & pepper, grated nutmeg (optional) and sprigs of parsley for garnishing. Vegetable Stock To make you own vegetable stock, slice 1 onion, 2 leeks, 1 fennel bulb and 2 carrots. Put into a large saucepan with some fresh parsley sprigs, coriander seeds, bay leaves and thyme, cover with water, simmer for about 45 minutes, then strain. Make your own vegetable stock rather than using a stock cube, which could contain sugar, salt and artificial flavor and preservatives. You can buy organic bouillon powder. The Making 1). Put the onion in the olive oil gently and soften it, (without burning) for 5 minutes. Add the garlic and cook slowly until both are soft. 2). Add in the parsley and the spinach, you may need to add the latter in batches, waiting as it cooks down before adding more. Then add the water or vegetable stock and cook gently for maximum 10 minutes. The spinach should still be green; if it begins to change colour before the time is up, remove the pan from the heat immediately. 3). Stir in the lemon juice and allow the soup to cool. Blend, adjusting the consistency by adding more liquid, if desired. Check the seasoning, reheat gently and add a little grated nutmeg (optional). Serve garnished with parsley. Serve.
