Creamy Potato Soup

This Creamy Potato-Soup Recipe was shared by one of my net friend, joey. It's so delightful and this is a great & perfect recipe to serve your guests. Ingredients 1 onion (peeled and diced), 4 clove garlic, 2 pounds of potatoes (peeled and diced), 4 cups of chicken stock, 1 cup of milk or cream, salt and pepper to taste, cheddar cheese, bacon and scallions for garnishing. The Making Prepare a soup pot, heat olive oil, saute onions and garlic until soft. Pour in chicken stock and add in potatoes. Reduce heat and simmer for 20 minutes until potatoes are soft. Remove the pan from heat, add in milk and cream. Transfer soup into a food processor and puree until smooth. Return to pan and reheat over low heat. If adding turkey or chicken, add now and let it sit for a few minutes to warm up. Season with salt and pepper to taste, and garnish with chives or scallions, cheddar cheese, and/or bacon.
