Vegetable Cream-Soups

Ingredients

To prepare 1 cup of onions (diced finely), 2 cups of potatoes (diced finely), 2 tomatoes (blanched. Seeded, peeled and dice internal pieces), 1/2 teaspoon of garlic (minced ), 2 tablespoon of soy oil (Alternative item : sesame oil), 1/2 teaspoon of sea salt, 1/8 teaspoon of white pepper, 2 tablespoon of unbleached flour or  4 tablespoon of whole wheat flour, 1/4 cup of tomato juice or 1 tablespoon of tomatoes paste mixed with  3 tablespoon of  water, 2 tablespoon of barley miso (Alternative item : soup cube), 3 cups of plain soya milk, 1/4 cup of brown rice (cooked), 1 scallion (sliced diagonally)

The Making

Prepare a saucepan, put oil, add in & saute potato, onion, tomato, garlic including salt and pepper to taste for 5 minutes, Stir it. All in the flour and cook until all mixture was cooked & thickened which is about 5 minutes. Dissolve the miso in the tomato juice and add into the veggies mixture. Add in soy milk, stir constantly (Reason : avoid burning of veggies), until soup is thicken. Add in rice and stir. Garnish with scallions before serve.



Cream of Mushroom Soup

Ingredients

1 pound of fresh mushroom, 1/4 cup of margarine, 4 green Onion (sliced), 3 garlic cloves (chopped), 1 teaspoon of fresh thyme (chopped), 2 tablespoon of all-purpose flour, 4 cups of vegetable stock, 1 cups light cream, seasoning : salt & pepper to taste, 1 spring fresh thyme leaves, 1 tablespoon of fresh chives (chopped).

The Making

Remove and discard the mushroom stalk and slice the mushroom cap only thinly. Prepare a saucepan, melt butter, put in onion, garlic and lemon thyme; stir constantly for 1 minute. Add in the mushroom, salt and white pepper. Cook it for about 3-4 minutes. Add flour, stirring for 1 minute. Remove from heat and add vegetable stock, continuing stir it. Return to the heat and boil it, keep stirring. Reduce heat and simmer for 2 minutes. Whisk the cream into the soup, then reheat gently, stirring. Don't boil the soup. Add in salt & pepper; season to taste. Garnish with chopped chives and thyme before serve.



Onion Cream Soups

Ingredients

You need to prepare 6 Onion (chopped), 1.5 quarts chicken broth, 3 tablespoon of butter, 1 teaspoon of sugar, 6 tablespoon of Flour, 1 1/2 pints of light cream, 1 teaspoon of salt, 1 dash of Tabasco, Absinthe (Pernod) - opt - 2 oz

The Making

Prepare a soup pot, put in chicken broth, add in 4 onion, boil it for about half an hour. Saute another 2 onion in butter until soft. Sprinkle with sugar and blend in flour, after that, add to the chicken broth. Add cream and continuing simmering, cooking, stirring until thickening. Put through blender until onion are liquefied. Return to soup pot to reheat, simmering, cooking and stirring until to desired thickness of soup. Add Tabasco, pour into heated tureen with absinthe.Garnish with paprika before serve.


Tomato Cream Soups

Ingredients

You need to prepare 2 teaspoon of butter, 1 small shallot (peeled & minced), 1 Can whole peeled tomatoes (coarsely chopped - 1 can with 28 oz), 3/4 cup of cream, 1/4 teaspoon of salt

The Making

Prepare a saucepan, melt butter. Add in shallots and saute it briefly, don't brown. Add in tomatoes and cook until the consistency of a chunky sauce, about 8-10 min. Add in cream and seasoning, stir it. Bring soup to simmer. For a smooth soup, remove to a blender, and puree. Done.
