I wish to share with you Homemade Cream of Mushroom-Soup Recipes here. Cream of mushroom soup was the first soup I fell in love with as a child. Of course, back then it was Campbell's. At age 12 I could make it myself. But sometimes, i wish to try the homemade style too. Many thanks to my friend, Xiao Yang who gave me the following soup recipe which is very delicious too and i love it so much. Thanks, Xiao Yang.Ingredients For ingredients, you need to prepare for 1/2 cup of butter, 1/4 cup of flour, 1 onion (chopped finely), 1 pound of mushrooms (chopped finely), 1 pound of Mushrooms (chopped coarsely), 4 cups of chicken stock, 4 cups of light cream, 1/4 cup of Fortified wine, eg. port, sherry or madeira, dried parsley and basil (chopped) - to taste, seasoning : Salt and pepper - to taste The Making Prepare a soup pot, melt the butter over medium low heat. Add salt and onion. Saute Onion until soft.Add mushroom; cook for 5 min. Add flour , stir it as this will help to prevent lumps. Add stock , stir it as this will help to prevent lumps. Bring to boil, reduce heat and simmer for 5 min. Stir constantly while boiling and simmering. Add cream, basil, parsley and pepper. Simmer again for another 10 min. Stirring. Stir in fortified wine before serve.
