Excellent Corn Soup Recipe

This Excellent Corn-Soup Recipe was shared by my friend, Melissa during my visit to her house. She treat me lunch with this fantastic corn soup. What i can comment is, this soup is really really really E-X-C-E-L-L-E-N-T! I love this Soup!!!Ingredients Well, you shall prepare for 1 litre chicken stock, 4 slices of ginger, 6 scallions (separate the white and green parts, sliced thinly) , 1 tbsp of finely grated fresh ginger, 4 chicken thigh fillets (skinless and sliced finely), 450g canned creamed corn, 2 cup of corn kernels, sesame oil, 2 tbsp of cornstarch to mixed with some water (optional item - to thicken the soup if you prefer thicker soup), 1 egg white (lightly whisked with 1 tbsp of water), salt and pepper to taste. The Making Firstly, prepare a soup pot, pour in chicken stock and sliced ginger, bring to simmer until ginger infuse into the soup. Meanwhile, heat neutral oil in a pan, saute white parts of scallions and ginger for few minutes. Add chicken pieces and cook until the chicken are nearly cooked. Add creamed corns and corn kernels. Increase the heat up a little and stir this well before adding the stock (strain off the ginger slices). Add half the sliced green parts of the scallions and let the soup simmer until the corn has cooked through. Add salt, ground black pepper, sesame oil to taste. Add in remaining scallions and stir in lightly whisked egg white. Add in cornstarch mixture to thicken the soup if you like. Heat through the soup for few minutes and serve. Yummy!
