Gazpacho cold Soup

This is a perfect diet soup.

Ingredients

Well, for ingredients, you shall prepare for 1 kg ripe plum tomatoes, 1 small cucumber (peeled), 2 green peppers, of the long, pointy variety (if you can get hold of them), 3 cloves garlic, olive oil, some slightly stale bread (from your local baker, not factory-produced supermarket stuff – don't the freshness factor!), juice from 1/2 lemon, salt and pepper, water to taste, ice cubes.

The Making

Firstly, by using your thumb, blanch tomatoes and remove the seed and skin. Chop the tomatoes, peeled cucumber, green pepper, garlic and onion.

Prepare a blender, place in all veggies, bread, oil, vinegar, salt and pepper. Puree until smooth. Add in water.

The gazpacho should be very runny but it should have a strong pinky-orange colour. Add more water, oil or vinegar until you think the balance is right, being careful not to make it too vinegary or too watery. This is all personal taste - not until you've tried the real thing will you know how it should be.

Refrigerate it for few hours or add in ice cubes and serve immediately. Enjoy :)


Pumpkin cold Soup

This is one of my favorite soup. Creamy and Rich. Wonderful.

Ingredients

Well, you shall prepare for 2 cups of pumpkin (peeled and cubed), enough chicken stock to cover other ingredients, 2 wedges of Laughing Cow Cheese (La Vache Qui Rit), 1 tbsp of lemon juice, salt and pepper.

The Making

Prepare a saucepan, lace in pumpkin, salt and pepper; cover with enough stock. Cover the lid and bring to boil. Reduce heat and simmer until pumpkin are tender.

Transfer into a blender and puree until smooth. After that, pop in the cheese wedges and process til they are melted into the soup. Add in lemon juice before serving.

This soup is great to serve hot or either cold :) enjoy!


Potato cold Soup

Very easy t o make. Yummy!

Ingredients

Well, for ingredients, you shall prepare for 4 onions (peeled and chopped), 2 garlic cloves (peeled and minced), 4 tbsp of olive oil, 4 potatoes (peeled and chopped), 6 cups of chicken stock or vegetable soup, 1/4 tsp of cayenne, 3/4 cup of chopped cilantro (optional item), salt to taste.

The Making

Heat 3 tbsp of olive oil in a saucepan over medium heat, saute onions and garlic for about 5 minutes until soft. Add in remaining 1 tbsp of olive oil and potatoes, stir fry for about 1 minute. Pour in stock. Cover the lid and bring to simmer for about 45 minutes.

Transfer to a blender and puree until smooth. Return to pan, season with salt and cayenne. Add in chopped cilantro (optional item). Refrigerate and serve cold.


Celery cold Soup

A wonderful soup to cheer up your day.

Ingredients

(4 servings)

Well, you shall prepare for 1 bunch of celery including leaves (chopped), 1 large onion (peeled and chopped), 6 cups of light chicken stock, 1 potato (peeled and grated), 1 handful of chopped parsley, 1/2 cup of whipping cream, salt and white pepper to taste.

The Making

Firstly, heat oil in a saucepan over medium heat, saute onion and celery for about 5 minutes until soft. Pour in stock and bring to boil. Grate in potatoes. Lower the heat and simmer for about half an hour. Season with salt and pepper.

Transfer soup into a blender, add in parsley and puree until smooth. Add in whipping cream. Refrigerate and serve cold.

This soup is great too if serve hot.


Freshly Carrot Orange cold Soup

A refreshing nutritious soup :)

Ingredients

Well, for ingredients, you shall prepare for 2 tbsp of peanut oil, 1 pound of carrot (peeled and coarsely chopped), 3/4 cup of sliced leek (using white part only), 1 tbsp of fresh ginger root (peeled and minced), 3 cups of vegetable stock, 1 cup of fresh squeezed orange juice, salt to taste.

The Making

Firstly, you shall prepare a saucepan. Heat oil over medium heat. Saute carrots, leeks, ginger until soft. Pour in stock and bring to boil. Reduce heat and simmer for about 30 minutes until vegetables are tender.

Transfer into a blender and puree until smooth. Return to pan and stir in orange juice. Season with salt to taste. Refrigerate and serve cold.
