Gazpacho Cold-Soup This cold-soup is loaded with fresh tomato, filled with chunky bits of green pepper and onion, and adorned with an assortment of crunchy minced vegetables. Try serving Gazpacho in shot glasses at your next tapas party.

Ingredients (6 Servings)Well, for ingredients, you shall prepare for cold water, 1 cup of stale French bread cubes (crusts removed), 3 cups of tomatoes (peeled and diced), 1/2 cup of green bell pepper (diced), 2/3 cup European cucumber (peeled and diced), 1/3 cup of red onion (peeled and diced), 2 garlic cloves (pressed), 1.5 cups of tomato juice, 2 tbsp extra virgin olive oil, 2 tbsp of red wine vinegar, 1/2 tsp salt, freshly ground black pepper, minced green bell pepper and cucumber for garnishing. The Making Place bread into a bowl and cover with water. Let it stand for about 5 minutes until bread is soft. Squeeze out the water. Place bread, pepper, tomatoes, onion and garlic in a processor, puree until smooth. Pour into a bowl, add in tomato juice, salt, vinegar, pepper. Stir well. Refrigerate for few hours. Garnish with minced cucumber and pepper before serve.
Asparagus Cold Soup This Chilled Asparagus Soup is serve with crab meat. Very special & refreshing. I love this soup very much! Best in summer!

Ingredients Well, you shall prepare for 3 tablespoon of butter, 2 leeks (thickly sliced), 1.5 lb of asparagus (ends trimmed, spears coarsely chopped), 4 cups of reduced sodium chicken broth, 3 cups of chopped spinach leaves, 1 tablespoon of minced shallot for soup and 1 tablespoon minced shallot for crab, 6 tablespoons of fresh crab meat, 1 tablespoon of fresh lemon juice. The Making Heat saucepan and melt butter over medium heat. Saute shallots for about 1 minute. Add in leeks and cook for about 5 minutes until soft. Add in asparagus and pour in stock. Bring to boil. Reduce heat to medium and simmer for about 8 minutes until tender. Add in spinach, cover and simmer for about 4 minutes until wilted. Transfer soup into a blender, puree until smooth. Return to pan and season with salt and pepper to taste. Refrigerate for few hour. Mix crab meat, 1 tbsp lemon juice, and shallot in a small bowl.
Cucumber Cold-Soup Great cold soup! Let's enjoy this great soup in hot summer :)

Ingredients To prepare 2 cucumbers (peeled,seeded,and chopped), 1 cup of buttermilk, 1/2 cup of plain yogurt, 1 tablespoon of fresh lime juice, 1 small shallot (finely chopped), 1 tablespoon of fresh mint (finely chopped), 1/2 teaspoon of curry powder, salt to taste, 1/4 teaspoon of ground white pepper. The Making Prepare a food processor, place in scallion, mint, lime juice and cucumber. Puree until smooth. Add in buttermilk, shallot, curry powder, salt and white pepper to taste. Refrigerate for few hours and serve cold.
