I love Chinese-Soups the most because i am a Chinese :) I wish to share with you some easy making and tasty Chinese Soup Recipes here. They are my favorite soups! Don't worry, you can get all the ingredients in Asia or Chinese grocery.


Great Filling Wonton Soup

Great filling. Fresh and tasty. My favorite soup :) i love to cook this soup always for my lunch. Sometimes, i will add in my preferred noodles & vegetables . Perfect.

Ingredients

Well, you shall prepare for 1/2 lb of boneless pork loin (coarsely chopped), 2 oz of medium size fresh shrimp (peeled and finely chopped), 1 tsp of brown sugar, 1 tbsp of Chinese rice wine, 1 tbsp of light soy sauce, 1 tsp of green onion (finely chopped), 1 tsp of fresh ginger root (chopped), 24 wonton wrappers, 3 cups of chicken stock, 1/8 cup of green onion (finely chopped).

The Making

For preparing of the filling of wonton, you shall prepare a bowl, place in pork, shrimp, wine, sugar, soy sauce, 1 tsp of chopped green onion and ginger. Mix well and let it stand for about 30 minutes.

Wrap the wonton by scoop the filling at the center of the wonton paper. Moisture the edge of wonton paper with little of water while wrapping.

Pour chicken stock in a soup pot, bring to boil. Once boiling, drop in the wrapped wonton and cook for about 6 minutes. Garnish with chopped green onions before serve.


Chinese Congee

This is not really a soup. Actually this is the mixture of chicken stock and rice. But i wish to share with you here because this is a great recipe and I love this congee so much. You can cook it and treat is as light breakfast, lunch or dinner. You can also add in your preferred ingredients, eg. chicken, pork, tofu, shrimp, etc. It will be great too! Enjoy :)

Ingredients

Well, for ingredients, you shall prepare for 1 cup of calrose rice, 9 cups of chicken stock, kosher salt and white pepper to taste.

The Making

Prepare a soup pot, pour in stock and place in rice. Bring to boil. Reduce heat to medium low, partially cover. Simmer for about 1 hour until the rice are tender. Add in more stock if the congee are thick.

Usually i will garnish the congee with hard-cooked eggs, sliced scallion, some chili garlic powder and soy sauce. Awesome!


Chinese Tomato Soup

This recipe is very popular with children (no doubt because of the apple sauce), and very simple to make. Yummy! Yummy!

Ingredients

Well, you shall prepare for 1 litre of chicken stock, 300g tomato puree, 250g chicken breast, 1 tsp of powdered ginger, 1 tbsp of Chinese soy sauce, 2 tbsp of sugar, 75g apple juice, 2 tsp of cornflour / cornstarch, 75g thin Chinese rice noodle (mi hoen), chopped scallions.

The Making

Prepare a soup pot, pour in stock and bring to boil. Add in chicken breast. Reduce heat to low and simmer for about 20 minutes. Remove chicken from pan, cut into bite size piece.

Meanwhile, you shall prepare the rice noodles or bean noodles see the package for instructions, these vary). Then rinse the noodles under cold running water and let them drain well. Rice noodles turn opaque white, bean noodles remain transparent.

Make a paste of powdered ginger, corn flour and a tablespoon cold water.

Add tomato puree, sugar and soy sauce into the chicken stock. Bring to boil again. Stir occasionally. once boiling, add in ginger / cornflour mixture. Stir constantly until soup thickened. Add in cut chicken meat and cook for few minutes. Finally, add in noodles and cook until the needle are done. Garnish with chopped scallion before serve.


Egg Drop Chinese Soups

Egg drop soup is a Chinese soup commonly consist of chicken stock, beaten egg and scallion. Sometimes, this soup will be served in Chinese buffet restaurant. This soup recipe is very easy to make. Kids love it the most, because of the beaten egg :)

Ingredients

Well, you shall prepare 4 cups of chicken stock, 2 tbsp of chopped green onions, 1/8 tsp of ground ginger, 1/4 tsp of salt, 1.5 tbsp of cornstarch, 4 beaten egg.

The Making

Prepare a soup pot, pour in stock & stir in salt, ginger and green onions. Bring to boil.

Meanwhile, combine the cornstarch with little of water. Stir well until the cornstarch dissolved completely. Stir in the cornstarch mixture into the boiling stock and cook until the soup is thickened. Stir in beaten eggs and cook for about 1 minutes. Serve hot.
