My Favorite Chickpea Soup

This Winter Warming Chickpea-Soup is one of my favorite soup. The soup is just perfect by adding some lemon juice. One time I ran out of broad beans so I used organic 4-bean mix instead. Really Great too! Ingredients Well, for ingredients, you shall prepare for 1 tablespoon of olive oil, 1 medium onion (peeled and chopped), 2 celery stick (chopped), 2 teaspoons of ground cumin, 600ml hot vegetable stock, 400g can chopped plum tomatoes with garlic, 400g can chickpeas (rinsed and drained), 100g frozen broad beans, zest and juice for half lemon, 1/4 cup of chopped parsley for garnish. The Making Prepare a saucepan, heat oil and saute onions and celery for 10 minutes until soft. Stirring constantly. Tip in cumin and saute for fews minutes. Add in stock, tomatoes, chickpeas and good grind of black pepper. Bring to simmer for about 8 minutes. Add in brad beans and lemon juice, cook for another 2 minutes. Add seasoning to taste. Garnish with lemon zest and chopped parsley before serve. Done. You may spice up your soup by adding 1 spoon of harissa paste.
