Homemade Chicken Enchilada Soup

I found this Chicken Enchilada Soup Recipe in a popular magazine which this soup is highly recommended by chef. Let's cook this highly rated soup by today :)Ingredients (12 servings)Well, for ingredients, you shall prepare 1 tbsp of vegetable oil, 1 pound of chicken breast fillets (about 3 fillets), 0.5 cup of onion (diced), 1 clove garlic (crushed), 4 cups of chicken stock, 1 cup of masa harina, 3 cups of water, 1 cup of enchilada sauce, 16 oz of Velveeta, 1 tsp of salt, 1 tsp of chili powder, 1/2 tsp of cumin. For garnish : shredded cheddar cheese, crumbled corn tortilla chips, picante sauce. The Making Heat a large saucepan over medium heat, add in 1 tbsp oil,brown chicken breast for 5 minutes. Shred the chicken into bite-size pieces. Set chicken aside. In the saucepan, add oil and saute onion and garlic for 2 minutes. Add in chicken stock. Meanwhile, mix masa harina and 2 cups of water in a bowl and whisk until blended. Add in the mixture into the pan with onion, garlic and stock. Add in remaining water, cheese, enchilada sauce, spice, chicken breast pieces and bring to boil. Reduce heat and simmer for about 40 minutes or until the soup become thick. Garnish with shredded cheddar cheese, crumbled corn tortilla chips and picante sauce before serve.
