Celery actually has almost zero calorie. You can eat a lot of it without thinking much about your waistline. According to Hippocrates (the father of medicine), celery calms the nerve – perhaps because of the high calcium content. It’s good on kidney and will help eliminate body’s waste through the urine. The seeds, leaves and edible root of the plant can all be used. Celery is used in aromatherapy and other traditional way of healing like Ayurveda. In Japan, rheumatic patients are sometimes put on a celery only diet.

Cream of Celery Soup

A rich and creamy soup!

Ingredients

(4 servings)

For ingredients, you shall prepare for 5 cups of chopped celery and leaves, 2 cups of chicken stock, 1 onion (sliced), 2 tbsp of butter, 3 tbsp of flour, 2 cups of milk, 1 cup of cream, dried sherry, salt and pepper to taste.

The Making

Prepare a saucepan, put in celery and chicken stock and 2 cups of boiling water, bring to simmer over medium heat until celery become tender, set aside.

In another pan, melt butter and saute onion, stir in flour and milk. Cook and stirring constantly until the mixture well mix completely. Add in the celery mixture, cream, salt and pepper to taste, stir.

Transfer to a food processor or blender, blend until smooth. Return the soup to pan and reheat. Add in sherry before serve. Done


My Grandma's Homemade Celery Soup

Ingredients

For ingredients, you shall prepare for 1/2 pound of julienned carrots, 1/2 pound of onion (chopped), 3 quarts of chicken stock, 3 quarts of milk, 3 pounds of celery (coarsely chopped), 1 cup of margarine, 1 cup of all-purpose flour, 1 tablespoon of salt and 1 teaspoon of white pepper.

The Making

Firstly, prepare a large soup pot, pour in stock and heat over medium heat. Once the stock boiling, add in carrots, onion, celery.

In another separate bowl, whisk in flour, salt, pepper and milk. Add the whisked mixture into the soup. Cover the lid and boil the soup for about 10 minutes. Strain the veggies by using a sieve. Serve hot.
