Carrot Soup

I love Carrot-Soup very much since i am a kid. Other than tasty, carrot is a very healthy food. A carrot will supply all your vitamin A needs for the whole day. Besides, it give your liver more energy and carrot did help in anti-aging.

I wish to share with your some easy making and delicious homemade carrot soup here! Great Soup...........! They are easily make and it did satisfy you in your busy lifestyle :) Yummy!


Carrot Broccoli Soup

Ingredients

Well, for ingredients, you shall prepare for 2 carrots (peeled and chopped), 2 celery (chopped), 1 onion (peeled and chopped), 1 tablespoon of butter, 3 cups of fresh broccoli florets, 3 cups of milk, 3/4 teaspoon of salt, 1/2 teaspoon of dried thyme, 1/8 teaspoon of pepper, 3 tablespoons of unbleached flour.

The Making

Prepare a saucepan, heat olive oil, saute carrots, celery, onion for about 4 minutes until onions are soft. Add in broccoli, cook for 3 another 3 minutes. Add in 2 3/4 milk, salt, thyme, pepper.

Cover the lid and bring to boil. Reduce heat and simmer for about 10 minutes. Cook until all veggies are tender.

Meanwhile, prepare a bowl, mix in remaining milk and flour, stir well until the flour dissolve completely.

Stir the flour and milk mixture into soup.Bring to boil and cook for another 3 minutes. Cook the soup until thickened. Serve hot.


My Mom's Homemade Carrot Soup

This soup is one of my favorite soup always cooked by my mom. This soup is a little bit spicy…I love it!

Ingredients

Well, for ingredients, you shall prepare for 1 small onion (peeled and finely chopped), 3 cups of carrots (peeled and chopped), 5 tablespoons of butter, 3 cup of chicken stock, 1.5 cup of heavy cream or milk, 2 teaspoon of curry powder, seasoning : salt and pepper to taste.

The Making

Firstly, heat a saucepan over medium heat, melt butter, saute onion for 5 minutes until soft. Add chopped carrots, cook stirring for about 5 minutes. Add in stock and cook for another 20 minutes. Transfer the soup into a blender, blend well. Put through a fine stainer. Return the soup to pan and stir in milk or cream. Add salt and pepper to taste. Garnish with parsley before serve.


Winter Best Carrot Soup

The best carrot soup which warm you up in the winter. Rich and Creamy. I believe you will like it very much after you try. Let’s please your families in dining table with this warm soup.

Ingredients

(4 servings)

For ingredients, you shall prepare for 2 tbsp of olive oil, 2 lb of carrots (peeled and sliced), 1 onion (chopped finely), 6 garlic clove (peeled), 5 whole cloves, 4 cups of water, 2 tablespoons of coconut milk, 1 tablespoon of fresh lemon juice, 1 pinch of sugar, 0.5 teaspoon of curry powder (optional), 1/4 cup of chilled whipping cream. For garnish : parsley or fresh cilantro.

The Making

Firstly, you shall prepare a saucepan, heat oil, add in carrot, garlic, curry powder and cloves, saute onions for about 7 minutes until soft.

Add in 3.5 cups of water. Cover the lid and simmer for about half an hour until carrot is tender. Stirring constantly. Discard the cloves. Transfer the sup into a blender, blend well. Return the soup to the pan. Add in lemon juice and sugar. Season with salt and pepper.

Prepare a small bowl, mix in whipping cream and coconut milk. Stir well and pour this mixture into soup. Let the soup simmer for another few minutes. Garnish with chopped cilantro or parsley before serve.
