This Butternut Squash Soup was one of the best soups I ever made. So simple, low fat and tastes incredible!This recipe is very outstanding. You shall give a try by today :)Ingredients To prepare 2 tbsp of butter, 1 small onion (peeled and chopped), 1 celery (chopped), 1 carrot (peeled and chopped), 2 medium potatoes (peeled and cubed), 1 medium size butternut squash (peeled, seeded and cubed), 1 container of chicken stock, salt and ground black pepper to taste, Crème fraîche (optional item) The Making Heat soup pot, melt butter, saute onion, celery, potatoes, carrot and squash for about 5 minutes until soft. Add in chicken stock and bring to boil. Reduce heat and simmer for 45 minutes until tender. Transfer soup into food processor and puree until smooth. Return to pot and season with salt and pepper. Stir in Crème fraîche before serve (optional).
