Rich Broccoli Soup Recipe

Ingredients

Well, you shall prepare for 4 tablespoons of butter, 1 small onions (peeled and diced), 2 celery stalk (chopped), 2 carrots (peeled and chopped), 2 cloves garlic (minced), 2 tablespoons of all-purpose flour, 2 quarts of vegetable broth, 1 cup of cream or half & half, 15 ounces of fresh broccoli florets, 2 large potatoes (peeled and diced), 1 cup of shredded cheddar cheese, 8 dashes of hot sauce. Seasoning : kosher salt and ground black pepper to taste.

The Making

Firstly, prepare a saucepan, melt butter over medium heat. Saute onions, celery, garlic and carrots for about 5 minutes until soft. Season with salt and pepper. Whisk in flour and cook for 2 minutes. whisk frequently.

Pour in broth and cream. Bring soup to simmer until potatoes are soft. Transfer the soup to a blender or food processor, puree until smooth. Return to pan and add in cheese and stir cooking until melt over low heat. Add in hot sauce and season with salt and ground black pepper. Serve hot.




Clear Broccoli Soup Recipe

Or, you want some broccoli in clear soup? Here in the fantastic one. This soup is great for lunch and dinner.

Ingredients

(3 servings)

Well, you shall prepare 1 cup of cauliflower florets, 1/2 cup of broccoli florets, 1/2 cup of mini shell pasta or any of your preferred paste, 1/2 teaspoon of pepper powder, 1/2 teaspoon of cumin powder, 1/2 teaspoon of dry parsley, 2 cups of vegetables stock, 1/4 cup of corn flour mixed with some water (stir well), salt.

The Making

Firstly, place broccoli and cauliflower in a luke warm water for 5 minutes. Drain and set aside.

Prepare the pasta in a microwave proof bowl and cover with boiling water. Put into the microwave and cook for 4 minutes. Drain and set aside.

Prepare a soup pot, pour in vegetable broth and 1 cup of water, add reserve cauliflower and broccoli and cook until tender. Add in cumin powder, pepper powder and salt to taste.

Now, you can thicken the soup by adding the cornstarch mixture into the soup. Add cooked pasta and parsley into the soup and stir cooking for 5 minutes. Serve hot.
