Excellent Broccoli Cheese Soup (Must try...!)

This truly is "Excellent!" Broccoli-Cheese Soup. This recipes was gave by my friend, Melissa. I followed recipe exactly, but next time I will add more broccoli and will try using just Velveeta and not using cheddar cheese . Fantastic recipe!Ingredients To prepare 1 onions (peeled and chopped finely), 1 carrot (peeled and chopped finely), 1 splash of olive oil, 3 tbsp of butter, 3 tbsp of flour, 2 cups of milk, 1/2 pound of chopped frozen or fresh broccoli, 2 cups of chicken stock, 1/2 lb of cheddar cheese (grated), salt and pepper to taste. The Making Prepare a pan, heat olive oil, saute onions, carrot and salt for 5 minutes until soft. Add in chicken stock and broccoli and cook over medium heat. In another separate pot, melt butter over medium heat. Add flour and stir well. Cook for about 2 minutes. Remove from heat gradually add in milk. Reheat gently. Add cheese into milk mixture until the cheese melted. Add the ready cheese, milk and flour mixture into chicken stock mixture. Season with salt and pepper to taste. Serve.
