I like to make a big batch of broccoli cheese soup on Sunday, so we can enjoy it all week. Creamy and cheesy. Ingredients To prepare 1 tbsp of butter, 1/2 onions (peeled and chopped), 1/4 cup of melted butter, 1/4 cup of flour, 2 cups of half and half, 2 cups of chicken stock, 1/2 pound of broccoli, 1 cup of carrots (chopped), 1/4 tsp of nutmeg, 8 oz of grated sharp cheddar cheese, salt and pepper. The Making Heat a saucepan, melt 1 tbsp butter, saute onion. Set aside. Cook 1/4 cup of melted butter and flour by using a whisk over medium heat for 5 minutes. Stir well and stir in half and half. Add in chicken stock, bring to simmer for 20 minutes. Add broccoli, carrot, onions, cook for 20 minutes over low heat.Season with salt and pepper. Add cheese and nutmeg. Cook until cheese melt. Serve :)
