This is an Outstanding Restaurant Quality Soup Recipe - Broccoli Cheddar-Soup Recipe! This is so delicious! I always make it with fresh cauliflower and extra-sharp Cheddar. Fresh broccoli works really well too - or a combination of the two - and if you like blue cheese, Stilton takes it to a whole new level. This soup never fails to please.Ingredients (6 Servings)Well, for ingredients, you need to prepare for 1/4 cup of butter, 1 onion (diced), 2 teaspoons of garlic powder, 1/2 teaspoon of ground white pepper. 1 package of frozen chopped broccoli, 1 quarts of chicken broth, 1 1/2 cups of whole milk, 1/2 cup of all purpose flour, 8 oz of shredded sharp Cheddar cheese. Seasoning : Salt to taste. The Making Prepare a soup pot, melt butter, saute onion until soft. Add in pepper and garlic, cook for about 1 minute. Stir in broccoli & chicken broth. Bring to boil and simmer for about 15 minutes until the broccoli are tender. Meanwhile, prepare a small bowl, mix in flour and milk, stir well until the the flour dissolved completely. Stir the flour mixture into soup, stirring often until the soup thickened. Reduce heat and stir in cheese until melted. Season with salt to taste. Serve hot.
