Beet Soup

Ingredients To prepare 3 tbsp of olive oil, 1 onion (peeled and chopped), 3 clove garlic (peeled and chopped), 6 medium beets (peeled & chopped), 2 cups of beef stock, heavy cream, salt and freshly ground pepper. The Making Prepare a saucepan, heat olive oil over medium heat. Saute onions and garlic for 5 minutes until soft. Add in beets and cook for 1 minutes. Pour in stock and season with pepper and salt to taste. Bring to boil and simmer for about 30 minutes. Remove from heat and allow to cool for sometime. Transfer soup to a blender and puree until smooth. Return to pan and heat through. Stir in cream and serve.

Ingredients For ingredients, you shall prepare for 3 medium beets (about 1 pound), 1 tablespoon canola or corn oil, 1 cup chopped onion, 1 pound of chopped carrots, 1 tablespoon minced fresh ginger, 1 large garlic clove (minced), 6 cups of vegetable stock, 1 teaspoon grated orange rind, 3/4 teaspoon of salt, Freshly-ground black pepper to taste,4 teaspoons sour cream (this is optional item) 1. Firstly, you shall peel the beets cut them into large chunks. 2. Heat the stock pot over medium heat, add and heat the oil. Put in onion and sauté for about 5 minutes. Add in carrots, ginger, and garlic. Cook for about 5 minutes, stirring frequently. Add beets and vegetables stock. Cover the lid and simmer the soup for about 50 minutes over low heat. Add in orange rind, and stir well. 3. After 50 minutes, purée the soup in blender. Add in salt and pepper to taste. Stir it well. Finally, you can serve the soup hot or chilled, garnished with dollops of sour cream. Serves 4.
