Beer Cheese Soup

This Beer Cheese Soups is one of my favorite soup. I love to cook this soup very often during my spare time, because i really love this soup very much! It's Wonderful.
Ingredients To prepare 6 cups of shredded sharp cheddar cheese, 3 cups of chicken stock, 1 1/2 cups of celery (diced), 1 1/2 cups of carrots (diced), 1 1/2 cups onion (diced), 2 cloves garlic (minced), 1 teaspoon Hot pepper sauce, 1/8 teaspoon of cayenne pepper, 1/2 salt, 1/4 teaspoon of black pepper, 2 cups of beers, 1/3 cup of butter, 1/3 cup of flour, 4 cups of milk or half & half, 1 tablespoon of Dijon mustard, 1 tsp of Worcestershire sauce, 1 tsp dry mustard and popped popcorn (for Garnish) The Making Prepare a saucepan, add in carrots, celery, onion and garlic; cooked over medium heat. Add in hot pepper sauce, cayenne pepper, salt and pepper; stir well. Pour in beer and stock, simmer until all veggies are tender which is about 12 min.Remove pot from heat. Meanwhile, melt butter in a large soup pot over medium high heat. Put in flour including a wire whisk, stir well for about 3-4 min, until flour turn in light brown. Stir in milk slowly, whisking to prevent scorching, until thickened. Remove soup pot from heat, stir in cheese. Keep warm. Combine beer mixture & cheese mixture. Stir in mustard, Worcestershire sauce and dry mustard. Add hot pepper sauce to taste. Bring to simmer for about 10 min. Serve with popcorn before serve. Enjoy :)
