Beef Noodle Soup

Beef Noodles Soup is a Chinese noodle soup made of stewed beef, beef broth, vegetables and Chinese noodles. It exists in various forms throughout East Asia and Southeast Asia. It was created by the "Hui" people during the Tang Dynasty of China.

Nowadays, this soup are mostly served in Chinese Restaurants of Hong Kong, Taiwan and China.

This delicious beef noodle soup recipe was given by one of my Taiwanese Friend, Ling Yi. After i cook this soup, what i can comment is , Excellent! You should give a try :)

Ingredients

(8 servings)

For ingredients, you shall prepare 2.5 pounds of beef short ribs (cut between bones into pieces), 7 cups of water, 1/3 cup of soy sauce, 1/4 cup of Scotch or medium dry sherry, 1 tablespoon of sugar, Six 1/4 inch thick diagonal slices fresh gingerroot, 8 scallions (trimmed), 3 large clove garlic (chopped), One 3 inch cinnamon stick, 1 tsp of aniseed, 1/4 tsp of dried hot red pepper flakes, 0.5 pound turnips(peeled and cut into 3/4 inch cubes), 6 oz of egg noodles, 1 tsp of Asian (toasted) sesame oil if desired.

The Making

Prepare a soup pot, mix in short ribs, scotch, soy sauce, water, sugar. Cover the lid and bring to boil. Reduce heat and simmer and skim froth. Add in 5 scallions, gingerroot, flattened with the side of a large knife, garlic, cinnamon, aniseed, pepper flakes, and cover, simmer for about 2 hours until the rib meat is tender. Let ribs cool, uncovered, in broth 30 minutes and transfer with a slotted spoon to a cutting board. Chop the meat and discard bones and fat.

Strain the broth by using a fine sieve into a large saucepan, add in the chopped meat. If serving soup immediately, spoon of fat. For best results, you shall chill soup for overnight adn discard fat.

Add turnips and bring to simmer for 10 minutes. Add noodles and simmer until the noodles are tender. Soup may be prepared up to this point 2 days ahead (cool uncovered before chilling covered). Reheat through. Slice remaining 3 scallion and stir into soup. Stir in sesame oil. Serve hot.
