Barley Soup

This barley-soup consist of sausage and with a lot of texture and flavor. This is my FAVORITE soup! I used hot sausage and it was amazingly great. By using slow cooker, the flavor can be blend better.
Ingredients
Well, you shall prepare for 1 pound of Italian sausage, 1/2 cup of onions (peeled and diced), 1 tbsp of minced garlic, 1/2 tsp of Italian seasoning, 1 can of chicken broth (48 fl oz), 1 carrot (peeled and sliced), 1 package frozen chopped spinach and 1 cup of uncooked pearl barley.
The Making
Brown sausage, onion and garlic until sausage browned in a skillet over medium heat. Add Italian seasoning. Remove from heat and drained.
Prepare a slow cooker, place in sausage mixture, chicken broth, spinach, carrot and barley. Cover the lid and cook for about 6 hours on low heat. Serve.

Wild Mushroom and Barley Soup
Ingredients
(5 Servings)
Well, you shall prepare for 1 liter water, 30g dried mushrooms, 1 tablespoon butter, 1 onion (finely diced), 1 stalk celery (finely diced), 1 carrot (finely diced), 1/4 cup sherry wine,
1/2 liter vegetable stock or chicken stock (1/2 liter is 51 ounces), 1 cup pearl barley and 2 teaspoons thyme (chopped)
The Making
Firstly, you shall heat water over medium high heat. Add in mushrooms. Cover the lid and simmer the mushroom for about 20 minuted until tender. Strain, reserve broth and chop mushrooms.
Then, prepare and heat a saucepan over low heat, melt butter, add onion, stirring often until caramelized (15 minutes).
Now, you can add in celery and carrots, cook for about 5 minutes.
Add mushrooms and cook for about 2 minutes. Add Sherry and cook until almost evaporated. Stir in mushroom broth (reserved liquid from soaking), stock & barley. Simmer for about half an hour until almost tender. Stir in thyme, salt & pepper. Simmer for about 5 minutes until tender. Serve and enjoy :)
