Baked Potato Soup Recipe

This Baked Potato-Soup Recipe was great. Better than any potato soup I've had in a restaurant and definitely my favorite soup ever! To cut down on the fat I used 2% milk, low fat sour cream, 2% cheese, and left the bacon out. You must give a try!
Ingredients Prepare 4 large baking potatoes, 2/3 cup of flour, 2/3 cup of butter, 7.5 cups of milk, 1 garlic cloves (minced), 1 cup of sour cream, 6 green onions (chopped), 14 slice of bacon (cook until crisp and crumbled), 2 cups of sharp cheddar cheese (grated, pepper and salt. The Making Firstly, bake potato in a 350 F oven for 1 hour until tender. Prepare a saucepan, melt butter. Blend in flour gradually with a wire whisk until thoroughly blended. Cook the roux (flour in butter) until a very pale golden. Slowly add milk to the roux, garlic and season to taste, whisking constantly. Cut the potato into half and take out the interior and set aside. Chop up half of the potato peels and discard the rest. After that, whisk in potato when milk mixture is very hot. Add in green onion and potato peels. Whisk well and add sour cream and bacon. Heat it and add in some cheese until melt. Serve hot :)
