Best Asparagus Soup

This is the Best Creamy Asparagus-Soup that i ever tried. You know, all these while, i am not fancy about asparagus soups, but, after i tried this asparagus-soup recipe, i love Asparagus-Soup forever! This recipe was given by my friend, Melissa. Thanks, Mel.Asparagus are high in water content and are considered a good vegetable in an elimination diet. You should give a try!
Ingredients (Servings : 5)Well, for ingredients, you need to prepare for 2 pounds of asparagus, 3 tablespoons of unsalted butter, leaves of 2 fresh thyme, 1 tablespoon of dry vermouth, 1 yellow onion (finely chopped), 5 cups of chicken stock, 1/3 cup of heavy cream, fresh lemon juice from quartered lemon, Seasoning : salt and pepper The Making First of all, cut tips from 13 asparagus 1.5 inches from top and halved tips lengthwise if thick, reserve for garnish. (Optional) Cut the stalk and all remaining asparagus into half inch piece. Prepare a soup pot, saute onion until soft. Add in asparagus. pepper and salt to taste. Cook for about 5 minutes. Add in chicken stock, thyme. Cover the lid and simmer for 20 minutes until asparagus are tender. Optional - Meanwhile, prepare a pot with half pot of water & some salt, bring to boil over high heat. Once boiling, add in the reserved asparagus tips in boiling water for about 4 minutes, drain. Puree soup in a blender or food processor until smooth. Transfer back to the pot, stir in cream, vermouth and lemon juice. Add in seasoning - salt and pepper to taste. Garnished with cooked asparagus before serve (optional). Done :)
