Mexican Albondigas Soup

Mexican Albondigas-Soup are commonly served in a soup with a light broth and vegetables.Let's check out this fantastic recipe! I found this recipe from a magazine which was high recommended by Chef. You shall give a try :) Restaurant Standard!
Ingredients Well, for ingredients, you shall prepare for 1 pound of ground beef, 0.5cup of uncooked rice, 1 tsp of salt, 1 tsp of cumin, 3 cloves of garlic (peeled and crushed), 3 qt of chicken stock, 4 celery (chopped coarsely), 3 white onions (quartered), 1 bunch of cilantro (leaves only), 4 carrots (peeled, chopped and sliced), 2 cup of greens (spinach or mustard), 2 tsp of oregano, 2 cloves of garlic (crushed). The Making The Making of meatball : Combine ground beef, rice, cumin, salt and garlic. Form 1.5 tablespoons into a meatball by rolling with your hands. Boil stock in pot over high heat. Once boiling, add in meatball, reduce heat and simmer for about 20 minutes. Add in celery, garlic, remaining spices, cilantro, onion and carrot, simmer for another 1 hour until the meatballs are cooked. Add in greens and simmer for another 15 minutes. Serve with fresh flour tortillas. (optional)
